Swan Creek Farm

Founder Dr. Catherine Browne built Swan Creek Farm as an experiential farm store where visitors can watch functional mushrooms grow up close, even peering into the mycology lab and fruiting chambers that few farms open to the public.

The open floor plan lets guests see mushrooms processed and remedies crafted in the working apothecary in real time, with samples such as mushroom koffee, mushroom jerky and umami seasoning offered along the way.

 

Unlike most functional mushrooms sold online — often imported from China — Swan Creek’s mushrooms are grown locally and indoors, without pesticides or chemical fertilizers. The farm uses agricultural byproduct substrate, biodegradable grow bags, minimal water and repurposes every part of the harvest, including spent mycelium for soil remediation. The team also grows seasonally, embracing “slow mushrooms” that take up to six months to mature.

Drawing on her background as a Doctor of Acupuncture and Oriental Medicine and decades of organic farming, Browne opened Swan Creek Farm to the public in April 2024.
